Will using 2x16GB RAM sticks (running at dual channel) help increase Apu graphic performance
Instead of Using 2x8GB (also dual channel) for gaming what will be the difference??

The APU RAM usage is adaptive. When the graphics of the APU need RAM
they use it. When that RAM is not in use - it is just system memory.
More memory means your system can pre-load more texture data into RAM,
reducing the need to access the disk and increasing performance. Thus a dual channel with high frequency RAMs (above 3000MHz) will definitely improved the system performance during games. As for memory size, the more the better for your PC.
Q. Will this Ryzen 5 3400g stutter in forza games?

3400G is an entry-level APU. Thus, it cannot handle high-end games well. There may be stuttering.
If you are going for an APU, then it is recommended to choose a 16GB RAM or higher with high speeds.
Q. Is MSI B450 Pro-Vdh Max compatible with Ryzen 5 3400G for Gaming? Can I play GTA 5 on 1080p on this?

Yes, the motherboard and CPU are good for each other.
You can run GTA @1080p.
Q. Can I play GTA 5 on ultra graphics with this

You will be able to run, but it will not give you playable fps at ultra graphics settings at 1080p.
You will be able to run GTA V at normal graphics settings at around 50 FPS at 1080p.
Q. Hi is Ryzen 5 3400 G is a 3rd generation Ryzen processor.
As in details it is mentioned as 2nd generation, however when you click on AMD Ryzen 5 3rd generation processor it is showing there which do create some confusion.
